PRODUCT HANDLING GUIDELINES

This is a guide and results can be affected by equipment type and temperature settings. Please consult your instore manager for any store specific procedures.

Lorrie’s products are precooked and arrive frozen for longer storage life, to assist with reducing stock loss and to offer you the opportunity to sell frozen, thawed in the deli or in your hot box.

 

Products can be heated from frozen or thawed, however heating from thawed in an oven is preferred to maintain optimum presentation. 

To ensure you get the best out of Lorrie's products always use the ‘first in first out’ rule  to ensure you get a great stock rotation. 

Once thawed, shelf life is a maximum of 5 days when maintained at 5ºC or below in a cold cabinet or chilled display.

HEATING TABLE

 

The cooking times and temperatures recommended are a guide only as appliances vary between brands.

 

Ensure internal temperature is above of 75ºC or until piping hot prior to the products being transferred to a hot food display.

 

Once heated the optimum shelf life is 6 hours for pies and 4 hours for sausage rolls & quiche when maintained at 75ºC.
